Polyculture/guilds for steep slopes

 Hi,

i'm on the way of acquiring a house and a land (3 acres, sell is for june) in south of france (sorry for any errors in my english),

the slope is quite steep, i don't have any slope numbers yet, but here is a picture so you can figure (the slope is the bared soil on the right, the slope is not as steep and more vegetated in the others areas) :

Precipitations are hight : 600-900 mm/year (24-35 inch/year)
Min temp on the 5 previous years is -10.5°C (13°F), USDA zone 8
Slope aspect is East South-East

 

So i'm wondering how to optimize my design (and so polycultures or guilds) to my slope 'pb'

Here is a rought schema i've made to include in the design the maximization of easy of harvesting. Here slope define for each area the function of each layer of the polyculture.

Polycultures should include plants that can stabilize slope, Hippophae rhamnoide seems an excellent choice, but if you have others ideas ...

 

Any suggestions on this design issue ?

One more remark, paths have already been made on the majority of the land (and they are not on contour), and i have some areas to path (the one you can see on the picture)
